About the Role:
An exciting opportunity has arisen for a talented Junior Sous Chef to join Khaymat Al Bahar (Lebanese Cuisine) at Al Qasr in Madinat Jumeirah Resort. The main purpose of this role is to Assist the Sous Chef or Chef de Cuisine to set standards and maintain them to the Madinat Jumeirah Standard. Furthermore to ensure the smooth operation of the department in-charge by optimising the use of materials and manpower, thereby maximising revenue and guest satisfaction.
Your key responsibilities would include:
Assist Chef de cuisine/Sous chef in the supervision of all colleagues engaged in the kitchen.Attend daily meetings with Executive Chef/Executive Sous Chef regarding menusAssist Chef de cuisine/Sous Chef in planning menus and recipes and test samples in conjunction with the Executive Chef/Executive Sous Chef.Write specific and accurate product specifications and standard recipes for use in the computer and by the material manager In conjunction with the chef de cuisine/Sous Chef to establish job methods and supervise on a regular basis and correct if necessary, cooking standards to maintain a high quality of food and service on quality basis.Plan rosters on a 1 weekly basis and to review on a daily basis with the Chef de cuisine/Sous chef overtime, rosters and holiday requirements and absenteeism.Liaise with the Chief steward in order to ensure high standards of cleanliness are maintained in all areas of kitchen.Any other duties as may reasonably be requested by the management.Coordinate and execute training of the kitchen colleague, be able to motivate, cook any food on a daily basis according to business requirements.
About You:
In order to be considered for this role, you will have completed kitchen apprentice or chef's training for at least one year and a recognised Culinary qualification. You should have at least five years experience working in an international five star hotel. You should currently be in a similar role with a particular focus on Lebanese cuisine.
This is a very "hands on" and demanding position so it is paramount that you work well in a team but are also able to set standards and lead by example at all times. You must be comfortable working under pressure and be passionate about producing cuisine of the highest possible standards. It is essential that you have good command of the English language (spoken and written) and you should be proficient in Microsoft Office applications.
